dream

I love watching G learn and observe the world around him.  It makes me look at things around me differently too when he asks me a million questions about something that seems common.  Like who makes all the street signals... I love this kit by Jennifer Fox Designs and thought it was perfect for this moment I caught of G where he was in thought.  Click here for credits.

Monday Meals in Minutes

This is my blog post for Jennifer Fox Designs blog where she has a great quick & easy Monday night meal posted every Monday.  You can check out more fun recipes here.

Since I just moved from Texas to California there is still quite a bit of stuff packed away in boxes.  This includes my cookbooks.  There is a great Rachel Ray 30 minute meal recipe for spanakopita that I really wanted to make one night last week but I couldn't get to the exact recipe.  I thought for sure I could replicate it anyway so off I headed to the grocery store to get the ingredients.  I ended up with a few wrong items and kind of mixed things together as I cooked but the dinner turned out yummy anyway!


Ingredients:
1 box of frozen puff pastry dough
1 box of frozen spinach
1 cup shredded mozeralla cheese
1/2 cup shredded parmesan cheese
a pinch of dried basil and oregano and salt and pepper (it's okay for it not to be exact)
1/2 cup of ricotta cheese
1/4 cup chopped onion sauteed in olive oil

Directions:
1.  Preheat the oven to 400 degrees
2.  Chop and saute the onion in olive oil in a skillet
3.  Defrost the spinach in the microwave then drain it well
4.  Combine the ricotta cheese, spinach, onion, parmesan cheese and spices in a food processor 
5.  Roll out the dough on a cookie sheet and add the spinach mix to each piece of dough (I usually cut it into 6 pieces to make 6 servings) then top it with some mozeralla cheese
6.  fold over the dough & put in oven to cook for about 14 minutes

Pull it out when it is browned on top, let cool, and serve with some marinara for dipping if you like!



The night I made these my son wanted to make strawberry milkshakes which was perfect timing to use the remaining strawberries we had from the farmer's market.

Ingredients:
milk
vanilla ice cream
strawberries
sugar
vanilla extract

Directions:
1.  Mix together the cut up strawberries with 2 tablespoons sugar & 1 teaspoon vanilla extract then let sit while you eat dinner


2.  Mix the strawberries, milk, and ice cream in the blender



3.  pour into a glass & enjoy
...sorry there is no photo for this step but we were ready to drink them!

a few new products...

Stolen Moments had a great collab kit released this week that is perfect for all that summer travel available at Scrap Matters.   It couldn't have been more perfect timing since I had just driven from Milwaukee to Green Bay and snapped a bunch of photos of the gorgeous farms along the drive.  You can click here for credits.

So, I saw this kit and immediately knew I wanted it to scrap some photos I have of Gavin reading.  But then instead of using some of the photos I already had I bribed G to let me take his photo by telling him I would read as many books for as long as he wanted.  We read a. long. time.  But I got some sweet photos and created this layout.  Click here for credits.

I created this layout using Stolen Moments Makin’ Me Happy:  The Happiest Add-On which I just love, love, loved!  Seriously the perfect addition to her Makin' Me Happy kit!  Still hanging in for the queen of scrap contest at Scrap Matters even though I have only done six layouts this month!
